CASSIA

Cassia (Cinnamomum aromaticum, Cinnamomum Cassia), which is also known as Chinese cinnamon, comes from an evergreen tree native to the south of China, Bangladesh, India and Vietnam. It is closely related to the “real” cinnamon (Cinnamomum zeylanicum, Cinnamomum verum), and likewise, the dried bark from this tree is used as a spice. Cuts are made in the bark of the branches, and once dried they curl on its own, shaping sticks.
