PINE NUTS

Pine nuts are the seeds obtained from pine cones, belonging to species from the Pinus genre (Pinaceae family). Approximately, 20 of these species can produce large enough pine nuts for a productive harvest; other species, although also edible, are too small and invaluable for human consumption. Pine nuts are covered by a coarse husk, which thickness depends on the species. Its shelf life is very long if they are kept unpeeled and refrigerated (amongst -5 to +2 ºC), but both, integral and peeled pine nuts, are quickly spoiled in warm and humid environments, becoming stale in few weeks.
