MUSTARD

Mustard seeds are round shaped, yellow to dark brown small grains, about 3 mm long. Sinapis alba is the species corresponding to white or yellow mustard, the most frequently consumed. Brassica juncea is the brown or Eastern mustard. There is another species, Brassica nigra or black mustard, which use is less extended.
